Burgundy is actually made of 3 distinc areas: Chablis to the North, Côte de Nuits and Côte de Beaune in the center; Côte Châlonnaise and mâconnais in the south.
If Chablis can possibly be done on a day tour (one could also imagine a Beaune day tour by train from Paris with 1 visit / tasting in Côte de Beaune in the morning and 1 in Côte de Nuits in the afternoon), a comprehensive wine tour of Burgundy would require at least 3 days / 2 nights.
Such an itinerary would allow you to discover the landscapes, winemakers and wines of the 3 'Côtes' (De Nuits, de Beaune and Châlonnaise)... and leave enough time to enjoy the pretty city of Beaune !
